F.A.C.E. LIST OF FOOD (CERTIFIED NON-GLUTEN PRODUCTS)
The quality department of Jamones Aljomar continues with its work line and success oriented to obtain Iberian pork products healthier and suitable for all publics.
At the end of 2010, they included in their “Official List FACE 2011 Food suitable for celiac” 19 products of Aljomar. This list, made yearly, is sent in printed version to the members, food industry (joined to the list) and catering channel (with agreement with FACE). Through this publication, the gluten intolerants obtain in this way an avenue for direct communication in which it is gathered products without this substance in a detailed list and certified by its own sectorial association.
In the list appear even 19 products, in different forms (whole pieces or sliced), of chorizo, salchichón, vela, longaniza, and the famous “Guijuelitos”. In this list there is not included Hams or Pork Shoulders in any of its formats as it is considered that they are a kind of food that because of their nature are exempt from this substance.
The celiac illness consists on an intolerance permanent to gluten. The gluten is a protein that appears in cereals like: wheat, oats, barley, rye, espelta, kamut and triticale. People affected must consume a diet free of this protein, that’s way they can’t consume either those cereals or its derivatives.
The meat product, have not gluten by nature, but when it is added additives, spices, etc., during the manufacturing process; it appears in its composition. In the case of products of Aljomar selected for the list, it has done laboratory tests that confirm that none of the ingredients and/or additives used for its production has gluten.
