Ramón, responsible for seasoning and preparing sausages

We owe much of the excellent flavor of Jamones Aljomar's cured meats to the hands of Ramón Hernández Gómez . He is responsible for seasoning the Iberian pork and giving it the perfect flavor before it is stuffed into casings. He himself tells us how he does his work in the factory's workshop. Since when have you been in charge of preparing the components for making Aljomar Ham sausages? It's been 11 years since I started working here when I was very young. How did you get this job at Jamones Aljomar? I started in the Saladero, where I was in charge of salting the hams, and then I worked in the Bodega, where I selected the hams and prepared the orders. Now I'm in the Obrador, and my job is to season the meats and prepare them before we move on to making the sausages. We're not going to reveal the secrets of the house, but can you give us any hints about what ingredients you use? We can talk about four very important natural ingredients to give the sausages just the right touch: paprika, salt, oregano and garlic… aljomar 028 How much seasoning do you prepare each day? We produce approximately 800 kilos of product daily. Who created 'the recipe' for each of the sausages? Its creator was Don Alfonso Sánchez, the company's founder. He developed the recipe himself when he started making sausages more than 20 years ago. Has your way of working changed much over the years, or is everything still done the same as in the beginning? The ingredients are the same; we haven't changed any of them, nor the proportions. However, new technologies have brought about changes. Before, the stuffing and mixing were done by hand, but now we have a mixer and a stuffer with different types of funnels, depending on whether we're making longaniza, chorizo, or lomo. We also have, for example, a metal detector, more precise scales, and a high-capacity mincer. All of these are tools that help us be more efficient and achieve higher quality products. aljomar 024 Personally, do you like products derived from Iberian pork? Yes, of course, I like them all very much: meat, sausages, ham… How do you usually eat them? I prepare cured meats and Iberian ham in sandwiches, for snacking… there's always a good time to treat yourself.
