Brioche Bread with Aljomar Secret

You might be wondering what time of day is best to savor this new dish from Martín Berasategui … but the truth is, this delicious treat is perfect any time! The Brioche Bread Sandwich with Aljomar Prime Iberian Pork, Kimchi Mayonnaise, and Pickles is one of the new creations included in our updated 2022 Recipe Book. Here's the recipe, step by step.

Ingredients

  • 1 KG Iberian Secret from 1st ALJOMAR
  • Salt
  • Pepper
  • Aromatic herbs

For the sauce

  • Kimchi
  • Mayonnaise
  • Brioche bread

Garrison

  • Pickled gherkin
  • Pickled red spring onion
  • Arugula

Preparation of the Brioche Bread Sandwich with Aljomar First-Class Secret, kimchi mayonnaise and pickles

We remove the excess fat from the secret, square it off by removing the thinnest parts, leaving it as even as possible on all four sides.

Season the pork with salt and pepper and add the aromatic herbs. Place it in a vacuum bag and cook for 5 1/2 hours at 80º. Once the time has elapsed, check that it is cooked to the desired doneness and then cool it in a blast chiller or in ice water.

Kimchi Mayonnaise

Mix the mayonnaise with the kimchi.

Mounting

We grill the pork, fill the bread with the pork and pickles. We drizzle with mayonnaise and top it with arugula. We close the sandwich and grill it again to warm the bread.
