- 100 grams of diced Iberian ham
- 50 grams of chopped mushrooms
- 2 tablespoons of olive oil
- 40 grams of unsalted butter
- 60 grams of corn flour
- 500 ml of milk
- ½ tablespoon grated nutmeg
- Ground black pepper
- 2 beaten eggs
- 4 slices of bread for grating
- 30 grams of grated Parmesan cheese
- Vegetable oil for frying
Preparation: In a medium-sized frying pan over medium heat, warm the oil and butter. Sauté the mushrooms until golden brown, then add the ham. Sauté it for only a few seconds to avoid losing its flavor. Remove the pan from the heat and add the cornflour. Cook this mixture, stirring constantly. Gradually add the milk, whisking continuously until the mixture thickens and is smooth. Once the mixture is homogeneous, add the nutmeg and black pepper, and continue cooking and whisking until it begins to boil and softens. The mixture should start to form a crust. At this point, remove it from the heat and spread it in a large container to cool. Cover the crust with plastic wrap and refrigerate for about two hours. After this time, beat the eggs in a bowl, and in another bowl, combine the breadcrumbs and cheese. To make the croquettes, flour your hands and start rolling the dough into cylinders about 5 centimeters long. Dip them first in the beaten egg, then coat them with breadcrumbs and cheese. For frying, the oil should be at the right temperature. To check this, add 1/3 of a cup of vegetable oil to a frying pan and test the temperature with a breadcrumb. When the breadcrumb turns golden brown in 30 seconds, the oil is ready. Finally, fry the croquettes for about two minutes, or until golden brown.
