Our annual meeting in Ronda is finally approaching! On May 20th, the XVI National Ham Carving Competition of Ronda will take place, a spectacular event where you can not only taste the best Iberian product but also enjoy live demonstrations by the great masters of knife carving.
This competition, which Jamones Aljomar has supported for years, seeks to recognize and select the best ham carver , the one who stands out for skill, style, and creativity. There will be eight national and international participants, pre-selected by the jury from among all the carvers who have entered the competition. The final showdown between the eight pre-selected candidates will take place on Sunday, May 20th, at 11:00 AM in the Palacio de Santo Domingo.

The House of Ham and Ronda Tourism They are the organizers of this prestigious competition, which is directed by Leocadio Corbacho Bocanegra and in which, to participate, it is mandatory to be a member of the ANCJ (National Association of Ham Cutters).
During the competition, each participating ham has a piece of similar characteristics and weight. The jury, made up of 6 industry experts, will evaluate:
- Profiling the piece on both sides.
- Cutter style.
- Cleaning, arranging and tidying the work area table.
- Finishing and refining the piece.
- Straightness of the cut.
- Size and thickness of the slices.
- Effectiveness and efficiency.
- General silvering.
- Artistic and/or creative dishes, one from each part of the ham, so 3 will be presented (maza, babilla and punta).
- Creative free-form dish, using any part of the ham.
Finally, First, Second and Third prizes will be awarded, as well as another for the Best Creative Free Dish.
