Adrián, at Jamones Aljomar since he was 21

The story of Jamones Aljomar is intertwined with the story of Adrián Nieto Alonso, the company's oldest employee. Dozens of memories flood his mind, all from when he started working at Aljomar in 1988. For example, when we spoke with him, he recalled the time Don Alfonso caught his big toe while tinkering—what a scare!—back then, “we were still in the old factory, the one we rented in Guijuelo.” The opening party for the new factory in '92 was a real milestone, “a huge step towards modernity,” Adrián remembers. These are the facilities we occupy today, with over 18,000 m2 equipped with advanced technology and perfectly adapted to the production and hygiene requirements of our Controlled Production and Processing Cycle for Aljomar Iberian products. Adrián is now 48 years old and was around 21 when he found out that a butcher in Ledrada was looking for workers. He tells us about it himself: Why were you interested in working for a company in this sector, dedicated to the production of Iberian products? It was more a matter of opportunity; I was from Fuentes de Béjar and had just returned from my military service. Ledrada is nearby, and I found out that Alfonso needed people to work there. That was my first job… and I've been there ever since. Have you always performed the same task within the factory? Initially, I worked in the workshop, but later I moved to the shipping department, where the production process is completed and the distribution of Iberian products begins. Currently, I'm still in this same position, where I prepare orders daily for every province in Spain, shipping them from one point to another across the country. Did you need specific training before joining, or has your learning been linked to your daily work? I started working very young, after completing my basic education and military service, so I didn't study anything further. However, my work in the factory has been a continuous learning experience from the very beginning, with me learning something new every day. This job has allowed me to constantly update my skills and acquire the necessary training at any given time. Adrian - longest-serving employee - Aljomar Hams - 01 Today you are the company's longest-serving employee, how have you experienced the evolution of the factory? Regarding the way the products are prepared, the process, the use of technology… there have been huge changes. When I started working here, we weighed the hams with a steelyard balance, and then we switched to scales; we used to apply the oil with a rag, and now it's a completely mechanized process; before, we took notes with white chalk on the wall, a task we now do with modern computers; we used to stamp the hams with a blowtorch, and nowadays they come from the slaughterhouse already inked. A litany of changes, all for the better… On the other hand, for many years now, the animals have been transported according to strict hygiene and sanitation standards, hanging on rails in perfectly equipped trucks. In this respect, I'm also struck by other routines that have disappeared, such as pouring the fat into buckets and then dumping them into a truck, because now it's deposited in containers that go directly to the fat factory for reuse. Which change catches your attention the most? Everything is more convenient now and the work is done faster, which means we're also working with larger quantities. We've gone from slaughtering 40 pigs a day in Ledrada to currently slaughtering 200 Iberian pigs daily in Guijuelo. 6. What do you think when you realize that you are preparing orders for Iberian products that travel thousands of kilometers to reach such disparate points on the planet as South Africa, Sweden, Mexico or Portugal? This is a great achievement, since years ago it was unthinkable that such a Spanish, such a special product could be exported to such different countries. Are you a good consumer of Iberian products? Yes, I really like chorizo ​​and salchichón. Which one do you prefer and at what times of day do you enjoy it? I don't have a preference, I love snacks on weekends, to enjoy them with my family, with the children… And how do you prepare Iberian pork? In the traditional way, or do you try the new recipes that our Top Chef Antonio Arrabal is launching?
