Don Alfonso Sánchez, founder of Jamones Aljomar, personally selects the acorn-fed Iberian pigs that produce the hams, shoulders, and cured meats in the Premium Range of the Guijuelo-based brand Tributo Don Alfonso .
The Cascajares Foundation Charity Auction has been held for 15 years, raising funds for numerous charitable projects. This year, all proceeds will go towards scholarships for young people with intellectual disabilities at the Down Madrid Foundation . Juncal Rivero and Leo Harlem will be the masters of ceremonies, and Sotheby's will coordinate the bidding for 10 live capons alongside paintings by members of the Down Foundation.
The ten Cascajares capons up for auction will be on display in the Royal Hall of the Ritz Hotel during the bidding. These birds have been raised free-range in the Cerrato region of Palencia and selected "for the quality of their breed, their meat, and their plumage."
