
The Celiac Association of Castilla y León, ACECALE, held the XV REGIONAL MEETING OF CELIACS, FAMILY AND FRIENDS IN CASTILLA Y LEON last Sunday, September 25, which took place at the Lasa Sport Hotel-Restaurant in Valladolid.
This event attracts over 1,000 people from across the region each year. It serves as a showcase for gluten-free products, both specialized and locally sourced, which can be discovered and sampled. Last year, more than 70 companies serving this community participated.
At Jamones Aljomar , committed to this community, we wanted to be part of their traditional gluten-free meal for nearly 400 diners from across the region and the 9th Gluten-Free Special Food Fair , which will be attended by more than 1,000 people; with the donation of gift boxes with gluten-free Iberian products.
Our Aljomar chorizos, lomos, morcones, longanizas, and salchichones are on the FACE list. They are gluten-free products, as evidenced by the results of analyses performed, the exhaustive selection of raw materials, and the supplier controls carried out by Aljomar's Quality Department.

As for hams and shoulders, they are also gluten-free, although they do not appear on the FACE list, because they are products of Iberian pork that are inherently gluten-free, both their raw materials and the products used for curing, so their presence on the aforementioned list of gluten-free foods is unnecessary.
Celiac disease is a condition that involves permanent intolerance to gluten, a protein found in cereals such as wheat, oats, barley, rye, spelt, kamut, and triticale.
People with this condition must follow a gluten-free diet; therefore, they cannot consume these grains or their derivatives. Meat products are naturally gluten-free, but gluten appears in their composition when additives, spices, etc., are added during the manufacturing process.
In the case of the Aljomar products selected for the list, all of them have been subjected to laboratory tests, and the result is that none of the ingredients or additives used for their manufacture contain gluten.
