Who doesn't love Iberian ham ? It's undoubtedly one of Spain's most delicious products, but it's also a superfood ... and increasingly so. Thanks to various studies, it's been discovered that this quintessentially Spanish product is packed with health benefits.
The idea that "I'm not going to eat ham today because... it's fattening, because of cholesterol" is very outdated, or at least that's what two studies carried out by the Ramón y Cajal Hospital claim, stating that it neither makes you fat, nor raises triglycerides, nor is it bad for people with hypertension.
Scientifically proven
Furthermore, thanks to this study, it is the first time that Iberian ham has been discovered to improve the endothelium, the tissue responsible for regulating blood pressure and coagulation, a source of hormones, and a component of the immune system. If the endothelium is enlarged, the chances of suffering a heart attack are significantly higher.
Tests were conducted on 50 healthy, non-smoking, non-overweight participants with no cardiovascular risk factors, aged between 25 and 55 years, who consumed two types of high-quality ham: grain-fed Iberian and acorn-fed Iberian . The conclusion was that the volunteersThey experienced improved endothelial function thanks to the high concentration of polyphenols, powerful antioxidants and anti-inflammatories. Furthermore, to ensure that the benefit came solely from these delicious Iberian hams, the consumption of other foods with similar properties was reduced in the group of participants: chocolate, olive oil, berries, and green tea. The study confirmed a better outcome for the volunteers who ate acorn-fed Iberian ham, although both groups showed improvements in endothelial function, contrary to old beliefs that tended to demonize this food. On the contrary, consuming this food improves health.
Another study carried out by the Andalusian Center of the Meat Sector (Teica) states that it poses no danger to pregnant women since the long curing process it undergoes eliminates toxoplasmosis.
