As part of its investment policy for the current fiscal year, the Salamanca-based company Jamones Aljomar has just remodeled the cutting room at its factory in Guijuelo to improve product processing conditions and optimize production flows. This strategic decision aims to strengthen its fresh meat division, responsible for the production and distribution of its Iberian pork products, the demand for which continues to rise significantly in both the domestic and international markets.
With an investment exceeding €200,000 and a 45-day execution period, the works carried out between July and August implemented a new humidity extraction system in the slaughterhouse, as well as renovating the floors and re-tiling the walls. Improvements were also made to the routing of the slaughterhouse conveyor belts to optimize the workflow, from the arrival of the slaughtered Iberian pigs to their subsequent transfer to the processing area and drying sheds.
With this renovation of the production area, Aljomar is adapting its facilities to the regulations and requirements of new international markets where it operates and strengthening its constantly expanding fresh meat division. Currently, its Iberian meats, hams, and sausages are exported to more than 25 countries worldwide, while also reinforcing its domestic presence. This family-owned company from Guijuelo, which will soon celebrate its 25th anniversary, maintains a policy of reinvestment in infrastructure, equipment, and technology, making it the leading producer of Iberian hams and sausages in Guijuelo. In its more than 18,000 m² factory, technology applied to production systems is present from slaughtering to the curing and processing of meat products, labeling, and storage of cuts from 50,000 pigs annually.
This new investment in the cutting room adds to the one recently made for the acquisition of a modern high-speed automatic labeling train , which allows the weighing and labeling of up to 100 packages per minute and with its Unicode system issues labels in different languages (Japanese, Chinese, Russian, etc.).
