
Let's try a recipe that lifts the spirits, one of the new offerings from the Berasategui-Aljomar 2020 Recipe Book. Few ingredients and a simple preparation, but with 12 Michelin stars.
Ingredients for lean meat with egg
- 10 slices of 100% Iberian acorn-fed shoulder ham ALJOMAR
- 2 chopped spring onions
- 1 chopped green bell pepper
- 4 cloves of chopped garlic
- 1 splash of white wine
- 1 kg of crushed natural tomatoes
- 1 pinch of sugar
- Virgin olive oil
- Salt
- In addition, 2 eggs
- 1 jar of tuna
Preparation of lean meat with egg
In a sauté pan or deep frying pan, pass the ALJOMAR 100% Iberian acorn-fed shoulder slices through the heat with oil and remove them to a plate.
In the same pan, sauté spring onions, pepper, garlic, olive oil and salt.
Add the wine, tomato, sugar and let it simmer for about 5-10 minutes.
Add the ham slices to the tomato and stir a few times.
Fry a couple of eggs in oil and place them on top of a good portion of lean meat.
