These days, despite the low temperatures, we've returned to the pastures where our acorn-fed Iberian pigs currently graze. We're in the Montanera , a crucial period in the raising of the animals selected by Jamones Aljomar to graze and feed freely in the pastures of southwestern Spain.
The Montanera season is essential for achieving the quality of Aljomar acorn-fed Iberian cured meats and pork , as the pigs exercise continuously in search of food, thus achieving a better distribution of intramuscular fat. During this period, these animals can walk more than 10 km a day and feed exclusively on 7-10 kilos of acorns daily.
The weather is also a determining factor at this stage, making a difference in product selection. Rainfall and low temperatures have a positive impact on the final production result. This period lasts about four months, during which the animals' diet consists exclusively of acorns, grasses, and other natural resources obtained from the fields.
Our founder, Alfonso Sánchez, accompanied by his son, José Luis Sánchez, the company's deputy director, meticulously oversees the breeding of Iberian pigs, which is undoubtedly a guarantee of success after more than 20 years of experience with total dedication to the world of Iberian products.
