The magic of the Montanera: A journey through the raising of the acorn-fed Iberian pig

In Spanish culinary tradition, there's no doubt that acorn-fed Iberian pork is a truly unique culinary treasure. But what makes this product so special? The answer lies in a crucial stage of its rearing known as the Montanera .

The Montanera is the last and most important period in the life of the Iberian pig. This natural process occurs during the autumn and winter months, while the pigs graze freely in the dehesas, a natural paradise populated by beautiful holm oaks and cork oaks that not only provide them with sustenance but also promote continuous and essential physical exercise. Here, the pigs feed mainly on acorns, grasses, and other natural resources they find in these extensive pastures.

The acorn-based diet during the Montanera season is what gives Iberian ham its unique characteristics. Acorns are full of healthy fatty acids, which infiltrate the pig's meat, giving it an unparalleled flavor and texture. This natural process not only improves the quality of the meat but also contributes to the animal's well-being, allowing it to live in a free and natural environment.

During the Montanera season, Iberian pigs walk more than 10 kilometers a day in search of their prized food: acorns freshly fallen from the trees. This constant physical activity is essential, as it contributes to a better distribution of intramuscular fat, which in turn significantly improves the quality of their meat.

Each day, these animals consume between 7 and 10 kilos of acorns, which are rich in healthy fatty acids. This daily feast, combined with exercise, allows the fat to infiltrate the muscles evenly, giving Iberian ham its smooth, marbled texture and unmistakable flavor that distinguishes it in the culinary world.
