With the arrival of autumn, our pastures are blanketed in shades of ochre and gold. It is in this setting that the montanera begins, one of the most important and traditional cycles in the production of our Iberian products.
What is the montanera?
The montanera is the period between October and February, during which Iberian pigs graze freely in the dehesas (pasturelands), taking advantage of the natural acorns that fall from holm oaks and cork oaks. This process is fundamental for the optimal development of the Iberian pig , as a diet based on acorns and natural pastures directly influences the quality of its meat.

The importance of the dehesa in montanera
The dehesa is a unique ecosystem in the world, the result of harmony between man and nature. This environment provides not only the necessary food for the Iberian pig, but also the space for it to move freely , thus promoting its well-being and muscle development.
Food and quality
During the montanera season, each pig can consume between 6 and 10 kilos of acorns per day , traveling up to 14 kilometers daily in search of this precious fruit. Acorns are rich in oleic acid, which contributes to the healthier fat of Iberian pigs and gives our hams and cured meats their unmistakable flavor and texture.
