Season both sides of the tenderloin with salt and pepper and begin filling them to your liking with bacon slices, prunes, and pieces of brie cheese. Roll out the top portion of the tenderloin with a rolling pin to make it thinner and larger, so it can cover the base portion. Then, use kitchen twine. If you don't have any, don't worry, just take some regular hemp twine and boil it in salted water for 1 minute. It will work just as well. Tie the round of tenderloin with twine, and if you want to make it even tighter, wrap it in plastic wrap and twist it until it's nice and snug. Then refrigerate it.
Once tied, we lightly brush it with barbecue sauce and sear it over high heat in a pan on all sides, then place it in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for approximately 25 minutes. At the same time, we've added some apples and onions to the oven, which we'll use later as a side dish.
While the sirloin is in the oven, we prepare a cheese sauce by melting some pieces of brie cheese and grated parmesan cheese in cream over the heat.
We plate the dish by slicing the tenderloin and topping it with the delicious cheese sauce, some walnuts, and the roasted apple on the side. Enjoy!
