ALJOMAR IBERIAN FEATHER GYROS

Since man (or woman...) cannot live by grilling alone, we propose a different way to cook our Aljomar Iberian pork shoulder , an exquisite cut thanks to its marbled fat. Today we travel to the Greek islands to suggest a gyros , the typical Greek sandwich, usually made with beef or lamb, which we've substituted with Iberian pork shoulder . The ingredients are simple, you can see them in the photo. A pita bread or corn tortillas (we used wholemeal tortillas), Iberian pork shoulder, onion and bell pepper cut into strips; diced tomato, some salad leaves (we used lamb's lettuce) and a yogurt sauce ; which we made from 1 yogurt, lemon zest, sweet and sour gherkins and a touch of sugar. Aljomar Iberian Pluma Gyros Ingredients (2) To get to the point: toast the tortillas on a griddle for 1 minute per side. In a frying pan, sauté the seasoned pork shoulder with the onion and bell pepper.
