And we're off to Ronda, for a new edition of the National Ham Carving Competition

One of the year's most outstanding events is just around the corner, one of the most eagerly awaited by Iberian ham lovers. We're referring to the 14th Ronda Ham Carving Competition, which will take place on May 22, 2016, in this town in the province of Málaga, organized by Leocadio Corbacho e Hijos La Casa del Jamón . And, of course, Jamones Aljomar will be there as both a friend and a sponsor. The competition showcases the exceptional work of ham carvers from across Spain. The jury will judge the participants based on their professionalism, knife skills, and artistic presentation of the ham. Scores will be awarded for attire, style, tidiness and cleanliness, peeling and trimming, slicing, plating composition, performance, efficiency, and the straightness of the cuts, as well as the finishing and trimming of the hams. The purpose of this friendly competition, according to the organizing team, is "to recognize and reward the professional ham cutter who demonstrates the greatest skill when cutting a ham." The event will be held at the Santo Domingo Conference Center and will begin at 11:00 AM, lasting approximately two hours. To select the eight ham carvers who will ultimately compete, the National Association of Ham Carvers conducted a preliminary selection process, described as "a documented, objective, and independent procedure" in the official competition rules. The participants are Pablo Montiel Enríquez (Seville), Irimea Alexandru Marian (Madrid), Emilio José Rubio Torralbo (Cordoba), José Antonio Martínez Molina (Murcia), Puri Garabaya García (Salamanca), Ivan Alexandre Contelles (Balearic Islands), Olga Benavides Fernández (Murcia), and Francisco Javier García Díaz (Ronda). There will be three main prizes. The first-place winner will receive €500 in cash, the Loncha de Oro trophy, and an Afinox ham holder. The second-place winner will receive €250 in cash and a trophy. And the third-place winner will receive €150 in cash and another trophy. This year, in addition, as if any incentive were needed, the Ham Carving Competition coincides with the 4th Edition of Ronda Romántica , the festival of travelers, muleteers and bandits of the Serranía de Ronda , with which a romantic era is recreated, giving rise to an encounter with the most genuine past of this legendary land and its identity.
