The long-awaited moment is almost here! The 18th National Ham Carving Competition of Ronda will be held on May 22nd, an annual event eagerly anticipated by professional ham carvers and ham lovers, who, to enjoy this edition, have had to 'suffer' through various delays over the last two complicated years (the last edition took place in 2019).

Eight ham cutters will participate in the event and will be judged by a select jury to designate the representative of Ronda who will compete in the national final of the ANCJ (National Association of Ham Cutters).
Aljomar has collaborated with the organization of this prestigious competition for many years, and this year is no exception. The contestants will compete by hand-carving a selection of Aljomar Iberian hams , which will also be a tempting treat for event attendees.
The Ronda National Ham Carving Competition assesses the skill, style, and creativity of the eight participants, who have been previously selected from among the best entrants. The judging criteria include the trimming of the ham on both sides, the cleanliness, organization, and tidiness of the work area, the finishing and trimming of the ham, the straightness of the cuts and the size or thickness of the slices, the overall effectiveness and efficiency, and the artistry in presenting each part of the ham (the shank, the rump, and the tip).
Jamones Aljomar will provide the different pieces, of similar characteristics and weight, which the contestants will cut to compete for First, Second and Third place and for recognition as Best Creative Free Dish.
The competition featuring these eight master ham carvers will take place on Sunday, May 22nd, from 11:00 AM to 3:00 PM, at the Santo Domingo Convent (Ronda Conference Center, Málaga). This event is once again organized by Casa del Jamón, under the direction of Leocadio Corbacho, and the Ronda City Council.
