David Sierra Jiménez, security guard at the Aljomar factory in Guijuelo

He's 32 years old and is in charge of making sure everything runs smoothly at the Jamones Aljomar facilities in Guijuelo. We wanted to get to know David Sierra, a security guard at our factory, a little better, and we'll tell you about this employee of the Aljomar Family. ALjomar Security Guard How long have you been working at Jamones Aljomar? I started working six and a half years ago, to be more specific, in the summer of 2008.
  • What did you think when they told you that you had to work in a ham and sausage factory in Guijuelo?
I was working for Prosegur, where I still am. I've always tried to work with the utmost professionalism, regardless of the assignment I'm given. When I learned I'd be assigned to guard the Jamones Aljomar facilities, I was especially excited because it was, and still is, a company with a renowned reputation in the ham industry. What does your daily task consist of? What are the unique aspects of your work compared to security work in other types of companies? My job here is the same as in other places where I have worked; I have to monitor and also control access, diesel fuel, and personnel.

  • What do you like most about your job?
Being in a ham and sausage factory allows me to learn many things, tricks and curiosities related to charcuterie, and it's all first-hand information. What is your biggest fear when you tour the factory facilities? Well, the truth is, the worst part has little to do with safety itself… Because the worst thing is slipping on the patches of ice that form outside during the winter months. This area of ​​Guijuelo is very, very cold, which is great for the products made here, of course, but for everything else… Have you ever found yourself in a difficult situation? Not really, although there have been some incidents with people outside the factory, but they were minor and I was able to resolve them properly. Walking through the curing and preservation rooms for Aljomar Iberian hams and sausages every day… that must make you really hungry… Yes, definitely, especially around midday. At that time of day, there are smells that whet your appetite, I can assure you. There will never be a shortage of good ham or sausage in your pantry, right? Exactly, or at least I try. Which one is your favorite? Without a second thought, Iberian acorn-fed ham. That is, when I can afford it. What do you like to do when you're not working? What are your hobbies? I enjoy sports like football or cycling; although I also love reading and watching history or science documentaries.
