The Ronda Ham Carving Competition includes blind professionals

XVIII Ronda Woodcutters Competition

The prestigious Ronda National Ham Carving Competition celebrates its 19th edition this year and will take place on May 14th at 11:00 AM in the Santo Domingo Convent. This event, organized by La Casa del Jamón de Ronda and the City Council, brings together the best professional ham carvers in Spain.

The competition is part of the events scheduled for the Royal May Fair and, this year, features a significant new addition: the 1st National Ham Carving Competition for the Blind, 'Carving Blindfolded' . Leocadio Corbacho, owner of La Casa del Jamón in Ronda, will offer a Master Class in this category, where participants will have access to adapted equipment.

Jamones Aljomar is once again sponsoring this traditional competition, and therefore, the participants will cut a selection of Aljomar Iberian hams which will later be tasted by the attendees.

Chef Miguel Ángel Herrera , from the Golimbreo school, is a guest member of the jury that will evaluate the 8 professional ham carvers competing, from different parts of the country.

All contestants will put their skill, style and creativity to the test in the knife cutting of ham, qualities that will help them show the jury their dexterity in the profiling of the piece on both sides, the cleanliness, placement and order of the work area, the finishing and trimming of the piece, the straightness of the cut and the size or thickness of the slices, the effectiveness and efficiency, and the art of plating each part of the ham (maza, babilla and punta).

As always, an event to be enjoyed with all five senses.
