This competition will take place over the course of a day at the Ronda Casino. Its purpose is to recognize and reward the skill of professional ham carvers working in various establishments, such as restaurants, specialty shops, cafes, and bars. Three participants will take to the podium, receiving cash prizes of €500, €250, and €150, respectively, for first, second, and third place. They will also be awarded the Loncha de Oro trophy and a diploma, and their work and results will be promoted in the media.
To choose the three winning professionals, the jury will assess details such as clothing, the cutter's style, order and cleanliness, the technique and result of slicing, the artistic composition of the dishes, and the finishing and trimming of the ham pieces they cut.
