This world-renowned professional becomes our VIP Ambassador , dedicated to promoting the excellence of Aljomar acorn-fed Iberian meats and hams and elevating them to the pinnacle of national and international gastronomy. We have a promising future ahead of us, one that will bring great success and much satisfaction to our customers.
Chef Martín Berasategui boasts 8 Michelin Stars and 18 AAA Diamonds , and among his many professional accolades are also awards such as best Spanish pastry chef of the year , best creative dish and best dish of the year , best chef according to the Spanish Academy of Gastronomy , Grand Prix of the Art of Cooking - awarded by the International Academy of Gastronomy to the chef with the greatest global projection - or the Tambor de Oro of San Sebastián .
Besides all his achievements and culinary expertise, in the refrigerator of this genius of gastronomy, according to his own words, there is never a shortage of Iberian pork, and that is why we are so sure of the perfect Aljomar-Berasategui pairing.
On the other hand, Jamones Aljomar shares more than just a passion for Iberian ham with Berasategui. In fact, we share a way of working and valuing those who work with us, because we agree that the success of great projects is the sum of small details . More than three decades of artisanal tradition and passion for Iberian pork
The origins of Jamones Aljomar date back to the 1970s, when its founders, Alfonso Sánchez and his wife Carmen Sánchez, started their first business selling Iberian pork products in the Triana neighborhood of Seville. This small shop, called 'La Salmantina', is still open and embodies the essence of Aljomar: its founders' passion for nature and Iberian pork, and their commitment to sharing these products with the world. Jamones Aljomar, both as a company and as a brand, emerged a few years later (1992), when another of Alfonso Sánchez and Carmen Sánchez's dreams came true: the construction of their own sausage factory in Guijuelo , the birthplace of Iberian ham. Since then, 25 years later, the company has grown to become a leading name in the production and marketing of Iberian products, both nationally and internationally.
Over the years, many significant steps have been taken. Jamones Aljomar owns the Vera Vieja livestock farm , where it raises its own Iberian pigs, and, as a partner, spearheaded the construction of the El Navazo slaughterhouse , which is certified for export to the United States, China, Japan, Korea, Vietnam, Singapore, South Africa, Russia, Argentina, Mexico, Peru, Brazil, and other countries.
All these resources have been crucial to the success of their Controlled Production and Processing Cycle. This system allows for internal monitoring and control of the entire production process: from the breeding and feeding of the Iberian pigs (at the Vera Vieja farm) to slaughter (El Navazo slaughterhouse) and processing (factory in Guijuelo), resulting in the consistency of the final product. The cycle includes strict control systems to ensure compliance with health requirements and traceability standards. Therefore, this process translates into the exceptional quality of their acorn-fed Iberian hams, Iberian cured meats, and fresh Iberian pork.
Jamones Aljomar's revenue exceeded €28.5 million last year, placing the company among the top 10 Iberian ham producers in Spain, where it expects to surpass €30 million this year . Its Iberian products are distributed throughout Spain's autonomous communities and in 25 other countries , including the United States, South Africa, Portugal, Sweden, Mexico, Chile, China, Hong Kong, Malaysia, Singapore, New Zealand, Ukraine, Bulgaria, Hungary, Austria, Switzerland, Germany, Denmark, Belgium, the Netherlands, France, Italy, and the United Kingdom.
