Aljomar Iberico pork loin sándwich

- 1 soft sandwich roll
- 2 Italian green peppers, rinsed and cut in half
- 4 slices ALJOMAR Iberico pork loin
- 4 thin slices ALJOMAR acorn-fed 100% Iberico ham shoulder
- 1 medium ripe tomato, thinly sliced
- Extra Virgin Olive oil
The sandwich should be served with a side of chips fried in olive oil. Once the chips are golden and crispy, drain the oil and season generously, tossing well to ensure the seasoning is evenly applied. Keep the frying oil hot.
Add the green peppers to the hot oil, cooking for just a few minutes and turning a few times to cook evenly. Drain and season.
Remove the remaining oil from the skillet, reserve for future use. Brown the sliced ALJOMAR pork loin on each side over medium heat, ensuring the meat is toasted on the outside and juicy on the inside.
Toss the sliced tomato in a bowl with a dash of olive oil and salt. Layer the tomato slices on the open face of the sandwich roll.
Add the fried pork loin, peppers and slices of ALJOMAR acorn fed 100% Iberico ham shoulder.
Close the sandwich and press together so that the top slice of the roll soaks up the juicy goodness and enjoy!
